    Anytime I try to eat raw almonds I have allergies of the throat and mouth. But I started thinking - as a teenager I used to eat candy bars with almonds in them frequently, with no problems. (World's finenst chocolate bars w/ almonds, hershey's bars with almonds).

    Is there anything related to allergies that "goes away" if almonds are roasted?

    This is not uncommon. Depending on what exact protein is causing the reaction, it may be denatured or otherwise altered by roasting.

As I recall there are two or more allergenic proteins in almonds, one of which is heat-sensitive.

    Cool. I have been reading about health benefits from eating almonds. Will I still get benefits from eating roasted?
